Yes, you read that correctly -instantly. This fast and simple dessert recipe for Strawberry and Vodka Sorbet comes together in less than five minutes and only requires four ingredients.And what's better than a fast dessert recipe that only uses a small number of basic ingredients? One which combines the heat of pure vodka, sweetness of strawberries and refreshing quality of sorbet to create the perfect summer dessert, that's what!
Whenever I want a fast and simple dessert I usually opt for some sort of mug cake, but I just haven't been feeling those recently - probably something to do with my current obsession with eating dark chocolate overnight oats for breakfast, which is just a teeny tiny step away from eating chocolate pudding first thing in the morning.
So, a generous dose of chocolate first thing in the morning and scorching summer temperatures usually leaves me wanting something cool, light and refreshing for dessert, which is where this Strawberry Vodka Sorbet comes in. I had originally intended to do a Pink Recipe Box Post Make Over of this Strawberry Sorbet Recipe, but the vodka bottle was sat too close to the blender for me to resist and the next thing I knew, I had Strawberry Vodka Sorbet!
The result is absolutely amazing! Now, I'm not one to drink vodka straight - or any other spirit, for that matter - but it just somehow works in this recipe. I've included enough vodka in the dish so you can actually taste it and get the spreading heat sensation, but not enough so it's overwhelming and ends up burning your throat. If you're not big on vodka, feel free to half the quantity in the recipe, but the texture will be a bit more solid and icy. Which brings me onto my next point...
Not only does the vodka improve the flavour, but it also helps the texture so much. This dessert is somewhere between a granita and a sorbet, but in texture alone it's neither, really. It's like a velvety-smooth alcoholic slush drink. Yes - this is a strawberry alcoholic Slush Puppy. Maybe I should specify that it's for adults only. Slush Puppy makes it sound like it's child-friendly. Which it's definitely not.
Whilst I ate this for dessert, it would work equallywell as a summer drink. But instead of recipes like this summeryLemon Vodka Slushor this festive Vodka Cranberry Slush, you don't have to wait hours or even days for it to fully freeze because it's made instantly in the blender!
Providing your strawberries are already frozen (Ialwayskeep a huge stage of strawberries in the freezer - you never know when a strawberry margarita craving is going to hit!) all you have to do is toss them in the blender with a bit of sugar, lemon juice and vodka and hey presto - you've got a light and refreshing dessert ready in less than five minutes.

Instant Strawberry Vodka Sorbet

Servings: 2 large or 4 small servings
Ingredients
- 20 medium-sized frozen strawberries
- ¼ cup white sugar
- ¼ cup vodka
- 1 tablespoon lemon juice
Instructions
Place all the ingredients together in a blender and process on high speed until you've got a slushie texture.
Spoon into glasses and serve immediately or store in a sealed container in the freezer.
