Recipe: Fresh Shrimp Ceviche with Homemade Tortilla Chips - Butter Believer (2024)

I became basically OBSESSED with Rachel’s blog, Nourishing Minimalism, as soon as I came across it. Almost all of her recipes have just 5 ingredients or less. I mean, how easy is that?! I’m really not a gourmet cook, myself, and I’m pretty intimidated by a lot of the recipes in most food blogs I follow. They’re just too complex, and involve too many variables that I’m scared I’ll mess up somehow.

When I google a recipe, it’s always prefaced with the word, “easy.” Like, “easy meatloaf recipe,” or “easy pot roast.” And then they usually have simple ingredients, but it’ll be like, a packet of Italian dressing mix, or canned soup, or other processed stuff that I’m not really into.

But with Nourishing Minimalism’s recipes, they’re not only simple and easy, they’re actually made with healthful ingredients—and they taste amazing! I don’t know how she does it, with only a small handful of ingredients in the recipes. You’d think they might taste a little bland with so few ingredients, but they’re actually perfectly flavorful!

Onto the ceviche!

Makes 4 delicious servings. 🙂

Ingredients

  • 4 medium tomatoes, diced
  • 1 medium red onion, diced
  • 1 jalapeno pepper, diced*
  • 1/2 bunch fresh cilantro, chopped
  • Juice of 2 limes
  • 1 pound of shrimp—cooked, deveined, detailed, and chopped

*Rachel’s tip for dicing up that jalapeno is to wear gloves!Apparently, if you cut a jalapeno with your bare hands, it can burn your skin. If that happens, try rubbing a lime over the burn to relieve it. I wasn’t willing to risk it, so I put on some rubber gloves and was fine. Oh, and I’m a big wuss and usually can’t handle spicy things, but one jalapeno with all the seeds removed was totally fine for me in this recipe—I actually loved the mild kick it gave!

Directions

Mix it all together, and set in the refrigerator to chill for at least 2 hours.

And, um, yeah. That’s all there is to it! Don’t you love how simple this is?!
